So many Vegan websites, cookbooks, and restaurants have some sort of “Green Goddess” salad dressing, smoothie or juice. I decided to make a Pasta Sauce version.

Green Goddess Pasta Sauce:

2 ripe Avocado’s

1 1/2 cup of plain Almond milk

1/2 cup chopped Kale

1/2 cup chopped Spinach

large handful fresh Basil

2 TBSP lemon juice

1 large clove Garlic

1 large TBSP Nutritional Yeast

1/2 TSP Nutmeg

Salt and Pepper to taste

Blend together avocado’s, almond milk, spinach, kale, garlic and basil in a high speed blender until very smooth.

Transfer into a medium size sauce pan and simmer on low-med.

Once sauce is warm whisk in nutritional yeast, nutmeg, salt and pepper.

You may also need to add more almond milk if sauce is too thick for your liking.

Pour over your favourite pasta to serve or toss with pasta and vegetables, top with some vegan cheese and bake.
