Never thought of posting these before because they seem like plain old potato’s but they’re so delicious I make them probably once a week. You can also add any flavours you want to fancy them up.
Recipe:
About 2 lbs red baby potato’s
1/4 cup of vegetable broth
salt and pepper to taste
Slice potato’s into thirds, this will give you slices about an inch thick.
Toss in a medium size bowl with the vegetable broth and salt and pepper.
Line a baking sheet with parchment paper. Lay potato’s out flat on baking sheet so none are overlapping. Place in oven on centre rack.
Broil on high for 15min.
Make sure you watch them close to the end. They will start to dry and puff up and will very quickly turn golden brown when they’re done, let them go dark brown but do not let them burn.
You can add so many flavours to these dill, rosemary or add some nutritional yeast. I added a TBSP of Apple Cider Vinegar last night and a little more salt for some salt and vingegar potato’s.
These potato’s are so good and crispy but soft on the inside and without any oil.
