Garden Pasta
Vegetable Kamut pasta
1/2 sweet onion
1/2 cup sliced mushrooms
3 cloves garlic
1 cup chopped asparagus
1 cup chopped green beans
1 cup chopped brocolli
1 cup chopped kale
handful cherry tomato’s
1 cube of veggie stock
1 cup water
2 tbsp Bragg’s Amino’s
2 tbsp nutritional yeast
a few sprigs of fresh oregeno
salt and pepper to taste
While pasta is boiling ( I cooked the whole bag and only added about 3/4 to my vegetables) saute onion, mushroom and garlic in a non stick large pan or wok.
Saute for 2 min and then add all your vegetables except for tomato. Saute for a few minutes on high adding a little water if your veggie’s start sticking to the pan.
Add the cube of veggie stock, water, Bragg’s, nutritional yeast and oregeno. Cook until veggie’s are a little soft and water is slightly thickened.
Add pasta and cherry tomato’s. Mix well and let simmer for a few minuted until tomato’s are warm and only slightly softened.
Salt and pepper to taste.
Perfect pasta dish for spring!
