My Vegan Lasagna turned out amazing! Best Vegan creation I have come up with yet!

Vegan Lasagna:


1 package of oven ready lasagna noodles

1 can of garlic and basil tomato paste

1 package of Daiya Mozzarella Shreds

2 cups mashed acorn squash

1 cup sliced mushroom

1 small zucchini sliced

1 small eggplant thinly sliced

1 handful of spinach

1 cup of raw cashews

1/2 cup of diced sundried tomato

1/2 cup sliced black olives

small handful of fresh basil

I mixed the can of tomato paste with three cups of water and mixed until smooth. Used this as a thin tomato sauce so noodles would cook.


1st Layer:

Pour a little of the tomato mixture in bottom of large rectangle casserole dish. Lay down enough Lasagna noodles to cover bottom of dish. (about 5 worked)

Spread down 1 cup of squash, zucchini slices and half of mushroom. Sprinkle 1/4 cup of Daiya.

Add another layer of Lasagna noodles. Pour some more tomato mixture on top to coat noodles.

Puree cashews in blender until smooth. (This will take the place of your ricotta.) You can add a little salt and lemon to the mix if you want but no need.

Spread the cashew mix on top of Lasagna noodles, spread the spinach and another 1/4 cup of Daiya. 

Add another layer of noodles. Pour some more tomato mixture to coat. Spread the rest of squash down, eggplant slices, and rest of the mushroom. Sprinkle over top another 1/4 cup of Daiya.

Lay down the last layer of noodles. Sprinkle over top the sundried tomato, olives, basil and pour the rest of the tomato mixture over top to coat. You may also want to add some thicker tomato sauce to cover the top layer of noodles so they don’t dry out. (This is what I did.) Sprinkle over the rest of your Daiya. ( I used a little extra on top cause I like it extra cheesy.)

Bake at 375F covered with tinfoil for 1 hour. Uncover and bake at 415 for another 20 minutes.

This sounds like a lot of steps but it was actually really easy and so good!

Better than any traditional meaty, cheesy lasagna, it was much fresher tasting.

I made this the night before so my husband could stick it in the oven when he got home from work.

Best smell to come home to!
