Vegan Lasagna

Got my first attempt at Vegan Lasagna sitting at home in the fridge right now.

I made it up last night before I went to bed and I’ll throw it in the oven when I get home from work tonight.

I layered lasagna noodles, acorn squash, zucchini, eggplant, cashew ricotta, spinach and a lot of Daiya Mozzarella Shreds.

Hopefully it tastes as good as it sounds!
