Felt like some warm comfort food this evening.
4 small to medium apples
about 6 prunes
1/4 cup of raisins
1/4 cup of cranberries
1/4 cup of slivered almonds
1 tbsp coconut palm sugar
1 tbsp agave syrup
1 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tbsp Earth Balance Vegan Butter
Use an apple corer to remove centers of apples, make sure you leave the skin on the outside.
Mix together all other ingredients except for the Earth Balance.
Stuff as much of the mixture that you can in each apple, it’s o.k if it looks like it’s going to burst.
Put a little dollop of the Earth Balance on top of each apple, right in the center so it melts down into the filling when baking.
Bake at 350F for about 45 minutes. Check them a couple times because there will be a lot of juice in the pan and basting these a couple times while cooking makes them extra delicious.
I poured a little coconut milk over top to serve but Coconut Bliss ice-cream would be even better.
