Went to spinning class and had a late dinner tonight.
Good thing I made a big pot of split pea soup last night.
Here’s the recipe I promised.
1 package of dried split peas ( I think a package is 454g)
1 package of smoked tofu
4 small potato’s
2 cloves of garlic
2 tbsp garlic powder
1 tbsp cumin
1 tbsp salt
8 cups of water
I soaked the peas overnight but I don’t think you actually have to.
Saute onion, leek and garlic in olive oil until soft. Add peas, tofu, garlic powder, cumin and all the water.
Bring to a simmer/boil.
Cook for an hour on medium heat.
Add cubed potato’s and carrots, cook for another hour at same heat.
Soup takes about 2 hours in total to cook. The peas will become thick and creamy but will stay a little chunky. You might need to add more water depending on how thick you like it.
Like I said 1 cup of this soup has 15 grams of protein.
