Cheesy Texas Hash


2 lbs russet potatoes (small cubes)

1 red pepper (chopped)

1 yellow pepper (chopped)

1 can of sweet corn

1 can of black beans

1 clove garlic (crushed)

1 tbsp tex mex or cajun seasoning

salt and pepper to taste

enough grapeseed oil to coat potatoes

1/2 cup of daiya brand dairy-free cheddar cheese

1/2 cup of daiya brand dairy-free pepperjack cheese


Mix all ingredients together in large bowl. Make sure you use enough oil to coat the potatoes. Transfer mix to a glass baking dish. Cover with tin foil and bake at 350F for about 1 hour and 30 min. Take the foil off for the last 15 min of cooking to crisp up potatoes. You can also turn your oven to broil for the last 5 mins if you like them really crispy. Let cool and Serve!
